    Tasting Notes This white wine has notes of green apple, white peach, and citrus zest. It's perfect for fresh salads, light seafood, and soft cheeses. Description Michael Voelker and Melanie Drese spent many years working in other fields, traveling the world and living in Heidelberg, Regensburg, London, and New York. In 2013 they returned to begin taking over Michael’s father’s winery in Kitzingen in Franconia, Bavarian Germany. Michael’s father is a long-time winemaker, who in fact sits on the quality control board for the appellation, but has been very supportive of Michael’s desire to make wine without additives. Michael has a particular interest in bats in the vineyard, and a few of the labels are inspired by them. He obtains bat guano from a local nature conservancy, which he uses when fertilizer is required. He is also sponsoring a research project to fund the role of bats in the vineyard. No fining, no filtering, no sulfur addition.

    Sweet sherry "Alexandro" Cream is produced in the area of Jerez de la Frontera from the grapes Palomino Fino and Pedro Jimenez. It has a rich aroma with tones of spices, honey and raisins, has an expressive taste with a piquant bitter ending.

  • Alexandro Fino

    Coming from 100% Palomino, the grapes were fermented in stainless steel and resulted in an 11% wine that was then fortified with neutral grape brandy to 15%. This alcohol degree, combined with the climate of the region, and the old giant cellars of barrels (Criadera systems) in Jerez, come together to create the perfect condition for the famous ‘flor’ yeast to appear on top of the aging Sherry. By law, Fino must age for at least two years under Flor before it can be bottled. Since this Sherry is meant to be fresher and younger in style, it was bottled not long after the required time (around 3 years), and released for immediate and delicious consumption. The result is expressive on the nose with almonds, Mediterranean herbs, and sea-spray. The delicate and bone-dry palate has briny bitter almonds, crunchy autumn leaves, and the classic ‘Flor’ quality that pairs ideally with so many quintessential tapas foods, mild cheeses, and a range of seafoods.

    The Alexandro Pedro Ximénez Sherry is a wildly delicious and exuberant dessert style sweet wine made from 100% Pedro Ximénez grapes in the clay rich soils of Cádiz. The white grapes (don’t be fooled by the color of the Sherry) hang on the vines for as long as possible to develop all the sugar possible before turning into wine. The grapes have such an intense concentration of sugar that it has a hard time fermenting, but once it reaches the desired sugar content, the wine is fortified to 16% alcohol for a long aging in the criadera system in an oxidative fashion (thus the dark almost rootbeer black color). The resulting Sherry is stunningly complex, with remarkable sweetness, and a rich date, fig, and black walnut character. Silky and beautifully textured, this PX is perfect for many types of dessert, intense blue cheese, ‘syrup’ for your pancakes, or sauce for your ice cream.

    César Florido’s name is synonymous with moscatel. His moscatel is the reference point for the classic, balanced sweet wines of the zone, characterized by notes of orange blossom, jasmine, and a honeyed, raisiny palate. His village of Chipiona, with its sandy-clay soils, is well adapted to the grape variety and has the best moscatel vineyards in the region. These concentrated wines, made from shriveled grapes can acquire enormous complexity with a long period of cask aging.

  • Gonzalez Byass Tio Pepe - Fino en Rama

    TIO PEPE Fino in Rama is the maximum expression of biological aging; it is Tio Pepe without filtering or clarifying, extracted directly from the center of the boot in spring, when the flor reaches its maximum splendor. Due to the uniqueness of the product, it is made in very small quantities and its consumption is recommended during the first three months after bottling. "En rama" is an expression once used to refer to wine in its most delicate state, before the normal processes of stabilization, clarification and filtration. "En Rama" expresses the unique character of Sherry: the penetrating aromas of the wineries and the intensity of the veil of "flower", the yeast that interacts with the wine and gives it its unique and delicate character.

  • La Cigarrera - Manzanilla

    La Cigarrera has a prima location in the barrio bajo, the lower quarter of Sanlúcar. As a former almacenista their wines were previously sold to other houses including Lustau, but La Cigarrera started bottling their own Manzanilla in 1997. Aged between four and five years in a solera system with eight scales. Nose: quite a high intensity nose, full of brine, chalky notes and almonds. Typical chamomile. Freshness of citrus zest and light whiffs of herbs. Mouth: smooth with decent complexity, still on salty notes, seaweed, peanuts and bitter almonds. Citric notes but overall the acidity is quite low. Soft fennel notes and green olives. Medium finish.

    This comes from a 225 year old family owned winery in Chiclana de la Frontera and is made entirely of organically farmed Palomino. It was aged first for five years biologically and then for over twelve years in an oxidative style. The nose shows a lifted personality with a nose redolent of nuts, spices, and a bit of dried caramel / dulce de leche. The palate is quite pretty and mid-weight with some nut, barrel notes, and a light sea spray character.

On the palate, you'll find zingy flavors of Lemonhead candies and crystallized ginger before the flavors turn to dried fruits such as raisins and dates.
